Today I have another delicious and colorful rice recipe to share. I love creating new basmati rice recipes because it is just so fragrant, easy to cook and can be a great side dish. There is definitely something about the rice, makes a very satisfying meal.
Pulao-Basmati Rice cooked with Red Pepper and Green Onions:
2 cups uncooked Basmati rice
1 tablespoon cooking oil
1 teaspoon whole cumin
1 4-inch cinnamon stick
½ cup green onions, chopped
1 red pepper, chopped
½ cup cilantro
¼ teaspoon turmeric
salt
Rinse rice gently and drain the water. Heat oil in a pan, add the whole cumin and cinnamon stick. Let it sizzle for a minute. Add green onions, red pepper and cilantro. sauté for a minute or so. Add rice, salt and turmeric. Add 3 cups of water. Let it come to a boil and then reduce the heat, cover and leave to simmer for 12-15 minutes. Serve warm as a side dish.
