I am sure all of us continue to hear about what is good for us one day and the next minute it is something we should cut out from our diets completely. It is rather frustrating! Here is what I think and believe, our body needs everything…. real salt, sugar, carbs, proteins, dairy.

The three things you want to remember when grocery shopping:

1. A balanced diet
2. Incorporating real fresh foods
3. No processed foods (an example- anything which can be cooked in 60 seconds in a microwave:))

As consumers, if we can establish the perfect balance of food choices, life can be so much more enjoyable. Having said that here is one of my favorites, very seasonal fingerling potatoes recipe!



Roasted Fingerlings with Dill and Garlic

1 pound fingerling potatoes
1 tablespoon light olive oil
1 cup fresh dill, chopped
1 heaped teaspoon garlic, chopped
1/2 teaspoon dried red chili flakes

Heat the oven to 400 degrees. In a bowl mix olive oil, cilantro, garlic and dried chili flakes. Wash and add the potatoes to a baking dish. Pour the mixture on the potatoes, mix well and place the baking tray in the oven for 25-30 minutes. Enjoy as a side dish with some juicy burgers!
